AREA OF PRODUCTION
This village appellation from the famous Côte de Beaune in the Côte d’Or department in France is known for its prestigious dry white wines with excellent ageing potential. Auxey-Duresses (pronounced “Aussay”) is the name of a village located in the south of the town of Beaune, tucked away in a small valley, at the point where the great red wines meet the great white wines. It is most certainly one of the most picturesque villages of the Côte. Auxey’s vineyards total 170 ha. They face south and south-east. The soils are made up of limestone marls which are well-suited to white wines.
TERROIR
Burgundy’s soil is clay-limestone based, yet it varies considerably from village to village. This renders the winemaker’s role all the more important when selecting the grapes.
VINIFICATION AND AGEING
The entire harvest is pressed in a pneumatic press for 2 hours. The juices are allowed to settle for 24 hours before undergoing alcoholic fermentation in barrels. The lees are stirred once a week in order to bring out all of the wine’s aromatic potential. Approximately 15% of the wine is aged in new barrels.
TASTING NOTES
COLOUR : Clear gold tinged with green.
NOSE : Scents of apple and fresh almonds.
PALATE : Lovely softness, heightened by a discrete touch of acidity. Good length.
SERVING TEMPERATURE
Between 12° and 14°C. When young, this wine holds nice surprises for lovers of baked fish, quenelles, and deli meats. When they are more mature, white Auxey is the perfect match for fish and poultry in cream sauce.
