Colour: The robe is pale gold flecked with greenish reflects.
Nose: The nose ranges from lime and flowers to mineral grace notes.
Mouth: In the mouth, it has a good minerality, which with time will become smoother and mellower.

Fish, poached eggs and seared vegetables. Cheese: camembert. Charcuterie: cured ham, rillettes, terrines.

TERROIR
Saint-Romain is located on cliffs so the soil of this high part of Côte de Beaune is particularly rocky, marly and limestone with clay which is favourable to Chardonnay.
Vinification: The grapes were harvested by hand, sorted and pressed in a pneumatic press. The juice was then settled before undergoing slow fermentation in oak barrels (20% new oak).
Maturing: The wine was aged on the lees for 10 months with regular stirring. It was bentonite fined and gently filtered before being bottled.
