Maison Jaffelin
The history of Jaffelin runs parallel to that of the 12th century Collegiate Church of Notre-Dame in the city centre of Beaune. Over the centuries, the Chapter House Cellars stored wines for the Church, Dukes, Princes and Kings. The Chapter House Cellars changed hands until the Jaffelin brothers established their wine merchant business there, in 1816.
The House has been led by lady winemakers for the past decade, an exceptional feature which has to feel in the wines. Marinette Garnier is the current winemaker.
The cuvery was modernised recently with special efforts being made to work with gravity, avoiding pumping operations so disturbing for the juices. Wood is also central to Marinette Garnier’s winemaking style. Far from altering the terroir characteristics of the wines, Marinette Garnier believes that wood is part of the Bourgogne wine style. She carefully selects the woods and cooking levels of barrels to match the characteristics of each cuvée and deliver unique wines.
